Maca-ringue

When I was in Paris, one of my favorite sweets was the meringue. They come in all sorts of flavor combinations and are literally the size of your head! But despite all that, it could not compare to the delectable delight of my ultimate favorite, the little macaron.  Then I thought to myself, “why not combine the two!” And so, the Maca-ringue was born. Here, I’ve paired a chocolate meringue with a rose flavored filling.  Enjoy!

Makes 2-3 dozen, dependent on size of meringues

Ready made chocolate meringues
8 oz package mascarpone cheese
1 cup powdered sugar
2 tablespoons rosewater

1. In a bowl, combine mascarpone cheese, sugar, and rosewater
2. Beat until fluffy (about 1 minute)
3. Sandwich the meringues together with a spoonful of the filling
4. Wasn’t that easy? Now go eat!
